I am trying to do an animation and when I click Save Optimized As, it tries to save it as a JPEG and the other two options are "HTML" and "HTML and Images". How can I save it as a gif? It wotn even let me preview the image

If you're using Image Ready, then it sounds like your optimization settings are set for JPEG instead of one of the GIF options. Double check your optimization settings and make sure that is not the case.
