Shoudl a website just have the one CSS file? or do you somethimes require more than one?

You can use more than one, for example if you had links to switch styles, and I think you can use one along with a Javascript statement which checks which browser, and loads the relevent stylesheet.
I only use one however, since the coding should work in all browsers.

also, having more than one css file is helpful when your css files are really huge.
like spoono.com for example, they use two css files, one for text visuals, and another for colors and positioning.

I use many since i have a styleswitcher on my site. Also it is best to use for then one way to link to your external stylesheet
