Is there any possible way to apply mass changes to numerous open files?
I would like to apply RGB color and mass save in gif format from jpg.

First you need to create an Action for what you want to achieve. Open the Actions Tab, press the record button and go trough each step you need, PS will save the process.
Then go to File->Automate->batch and set it up as you like.
Alternatively you could also use IrfanView in Batchmode which would do the same.
