Eh guys; So I'm currently working on a project and it is 6.25"x4.75" printed.

The big question I have is that when I view the project at 100% in Adobe Acrobat Reader there is a section of text that is unreadable. When I get my project printed will it still be unreadable?

The easiest way to find out is to run a test copy off, you should do this before finalising the design & print anyway. For best results make sure the image resolution is 300 or over.
