Selecting his face and putting it on a seperate layer, then you can do what you want.
The catch is the selecting part.
It takes ages to master the art of good selecting...
Next time:
Ask your friend to make the same picture, after he shaved his head (bald face is easier to select) and next time try to make the background a vivid strange color --> makes it easier to delete.

Go to Pixel2Life and search for pen tool tutorials (in fact I think there may even be a category for them) and learn how to use it. It takes a bit of time to get used to it but you will find that all professional graphic artists use it for cutting out pictures and any vector based work in photoshop.
Select the pen tool, select path mode at the top and then when you have finished click make selection and you are done!

The pen tool takes practice, its pretty hard to start with. You can hold alt and move the "handles" on the anchors to change the curve. The more you do it the faster it goes and the better the selection.

Soft selection is mostly done with brush tool, not pen tool.
Go into mask mode (depending on picture, maybe you should change the mask color intogreen instead of red by double clicking on the tool), take soft brush --> start with big radius, then always go finer.
Takes ages, but selection is usually good)

If you really know how to render then take off the lasso tool or whatever you use and just render ur friend and then make the color anything ya wish.
