Well I finally put R8 on my desktop a few minutes ago and started looking at differences. The one thing that people keep pm'ing me about is the Render Tags. In XL7 you go to your object manager and go to file-> new tag->new render tag but a lot of people use R8 and that option just wasnt there. So for all you 7 haters out there here is how you do it. Select your object in the object manager and then go File->New Tag->Compositing Tag. Then it will have a little jar icon to the right of your object. Click on it and down at the bottom right of your screen (if your layout is on default) in the Attributes tab and you will see a tab labeled 'Tag'. That is where you will find your rendering settings for making composite renders or chroma renders, etc. Hope that helps!
